Sourdough Starter with Pineapple Juice

(From Breadtopia website. They have a number of excellent video tutorials on making starters and baking bread.)

Day 1 mix 3 1/2 T whole wheat flour and 1/4 c unsweetened pineapple juice. Cover and let stand 48 hrs, stirring 2 or 3 times daily

Day 2 stir 2 or 3 times daily

Day 3 add 2 T whole wheat flour and 2 T pineapple juice. Cover and let stand 48 hrs, stirring 2 or 3 times daily

Day 4 stir 2 or 3 times daily

Day 5 add 5 1/4 T whole wheat flour and 3 T water

Day 6 add 1/2 c whole wheat flour and 1/4 c water

IN WINTER Boil a cup of water in the microwave and let it continue to boil for about 20 seconds so there is plenty of moisture, put your starter in there and shut it up. It should help with the fermentation process.
