Gluten Free Boule

Thanks to the folks behind the book Artisan Bread in 5 Minutes a Day, here is a great recipe for a gluten free boule:

Gluten-Free Crusty Boule

Makes enough dough for at least four 1-pound loaves

2 cups Brown Rice Flour

1 1/2 cups Sorghum Flour

3 cups Tapioca Flour (also called tapioca starch)

2 tablespoons yeast (can be reduced but you will have to increase the rise time)

1 tablespoon kosher salt (increase or decrease to taste)

2 tablespoons Xanthan Gum

2 2/3 cups lukewarm water

4 large eggs, whisked together

1/3 cup neutral-flavored oil or olive oil

2 tablespoons honey or sugar

Jeff and Zoe have made it so easy that there is no excuse to try baking your own bread. Nothing says "home" like the smell of bread in the oven.

Easy Refrigerator Rolls

It's important to understand that although I like to eat, I do not like to spend hours slaving over a hot stove.  Unless it's Christmas or Thanksgiving!

Way back in the dark ages before personal computers, I clipped recipes from newspapers (remember newspapers?) and magazines and taped them to recipe cards.  This is a family favorite, and easier than pie!

Sourdough Starter with Pineapple Juice

(From Breadtopia website. They have a number of excellent video tutorials on making starters and baking bread.)

Day 1 mix 3 1/2 T whole wheat flour and 1/4 c unsweetened pineapple juice. Cover and let stand 48 hrs, stirring 2 or 3 times daily

Day 2 stir 2 or 3 times daily

Day 3 add 2 T whole wheat flour and 2 T pineapple juice. Cover and let stand 48 hrs, stirring 2 or 3 times daily

Day 4 stir 2 or 3 times daily

Day 5 add 5 1/4 T whole wheat flour and 3 T water

Day 6 add 1/2 c whole wheat flour and 1/4 c water

IN WINTER Boil a cup of water in the microwave and let it continue to boil for about 20 seconds so there is plenty of moisture, put your starter in there and shut it up. It should help with the fermentation process.

Emily's Whole Wheat Bread (Bread Machine)

Place these in your bread machine in the order recommended for your machine.

1 1/2 cups water
3 Tablespoons olive oil
3 Tablespoons honey
1/2 Tablespoon salt
4 cups whole wheat flour (I use white whole wheat)
1 1/2 Tablespoon gluten
2 1/4 teaspoons yeast

Bake on regular setting.
